Microbial rennet helps milk form curds during cheesemaking. It is an enzyme preparation, while a yoghurt starter is a culture of bacteria. Understanding those different jobs makes it easier to choose the right ingredients for your first batch.

What is microbial rennet?
Rennet helps milk proteins gather into a gel. Cutting that gel produces curds, which separate from the liquid whey as cheesemaking continues. The University of Guelph’s cheesemaking guide explains how coagulation and whey separation fit into the process.
“Microbial” describes the source of the enzyme. MEITO identifies its microbial rennet as produced through fermentation using Rhizomucor miehei. Rennet is one part of a recipe. Depending on the cheese, you may also need a starter culture, salt and other specified ingredients. Some cheeses rely mainly on acid coagulation, so not every cheese recipe calls for rennet.
Is rennet the same as a yoghurt culture?
No. In yoghurt, bacteria ferment lactose, the sugar in milk, into lactic acid. As acidity rises, milk proteins coagulate and the texture develops. The starter supplies those bacteria. This process is described in Washington State University Extension’s Yoghurt Made Simple.
Rennet acts as a milk-clotting enzyme; it does not replace the bacterial culture needed for yoghurt fermentation. If your aim is yoghurt, follow a yoghurt recipe with the starter it specifies. Adding rennet to milk is not a substitute for that process.
Cheesemaking cultures also have their own roles, including developing acidity and contributing to ripening. A recipe may therefore call for both culture and rennet. Treat them as separate ingredients rather than interchangeable powders. The University of Guelph’s chapter on cultures explains the distinction.
Which milk should a beginner choose?
For a typical beginner recipe using rennet, choose fresh, ordinary pasteurised dairy milk with the fat content specified by the recipe. Read the carton: “pasteurised” and “UHT” describe different heat treatments.
Avoid UHT or ultra-pasteurised milk for this kind of cheesemaking. The stronger heat treatment can interfere with the proteins’ ability to form a suitable curd. Homogenisation is different: it changes the distribution of milk fat. Homogenised pasteurised milk is used in many home recipes, although the curd can be softer. Follow a recipe written for the milk you have. Changing from cow’s milk to goat’s milk, or changing the fat content, may change the result. Plant-based drinks also need their own suitable recipes; this guide covers dairy milk.
Pasteurised milk is the sensible starting point for a home beginner. The UK Food Standards Agency warns that raw milk can contain harmful bacteria, with particular risks for vulnerable people. Rennet is not a replacement for pasteurisation.
What should you check before starting?
- Read the whole recipe. Identify the milk, culture, rennet and equipment it requires before heating anything.
- Read your rennet instructions. A 1g pack size does not mean the whole pack belongs in every batch. Use the directions for the actual product and milk quantity.
- Measure carefully. Use a suitable thermometer and a measuring method appropriate to the small amount specified. Follow any preparation or dilution directions on the pack.
- Prepare a clean workspace. Wash your hands and clean food-contact equipment. Keep ingredients under the storage conditions on their labels.
Accurate measurement matters because rennet preparations differ in activity. The University of Guelph’s process guidance emphasises careful rennet handling. Its commercial examples are background science, not a replacement for your pack instructions.
Common first-batch questions
Why has my milk not formed the curd I expected?
Check the milk’s heat-treatment label, the recipe temperature, the amount measured and the rennet’s storage instructions. Compare what happened with the recipe before changing several things at once. A batch note recording your milk, quantities and timings makes the next attempt easier to assess.
How long will the cheese take?
Curd formation and finished cheese are different stages. Cutting, draining and any further processing or ripening depend on the recipe. There is no single completion time for every cheese, milk and rennet combination.
Does “microbial” tell me everything about dietary suitability?
No. It describes the enzyme’s source, not the complete ingredient or allergen profile of the retail pack. Check the supplied label and ask about the exact product if you have a dietary requirement.
